Awakened Grains unveils process for controlled germination and flour
The company says the technology could be licensed as Imperial Flour and includes a pipeline for an additional product called Power Flour.
Awakened Grains has introduced a process for controlled germination and starch conversion that turns whole grains into baking flour, aiming to improve flavor, nutrition and baking performance, according to the Seattle-based grain technology company.
The company said food manufacturers could use the process to make whole grain bread, pastries, snacks, breakfast cereal, pancake mixes, pizza crusts and pasta. It said a patent covers the approach for cereal and non-cereal grains, ancient grains, legumes, pulses and seeds.
Awakened Grains added that two applications for the processing technology are in the pipeline, including Imperial Flour, which it says is available for licensing to baked foods companies, blenders and dry ingredient companies.
The company also plans to introduce Power Flour, designed to deliver more protein and fiber and less starch than standard bread flour. It also noted that Green Acres Milling will soon begin operating an oat mill with production capacity of 39,420 tonnes, or 869,062 cwts, of finished oat products per year.
